Pi Day for the Pie-less
Yesterday was Pi day and despite it's mathematical background it's often the best day to enjoy a perfect slice of pie. That being said, there are probably a lot of people out there feeling left out - this is a shout-out & a recipe for all our vegan & gluten-free friends out there!
One of our main goals at Four All is to make sure that everyone can enjoy a treat, even if they have sensitivities that would normally be a barrier. Here's a recipe for a vegan & gluten-free Crustless Pie à la Mode:
What you need:
- 1 scoop of your favourite ice cream flavour
- 2 peaches or apples
- 1 Tbsp of coconut oil
- 2 tsp of brown sugar and cinnamon
- a fresh garnish, such as mint
How to make it:
First, cut the 2 peaches or apples into small slices. Then add your coconut oil to a frying pan set just below medium heat. Make sure the oil is evenly distributed on the pan then toss in your peaches and reduce heat. Sprinkle on the brown sugar and cinnamon, and add more of either depending on how you like it.
Once your peaches or apples are nice and soft and your kitchen smells like a dream... move them to a plate and add a touch more cinnamon. Then, take a scoop of ice cream from your pint and put it on top!
