Tasty Tip: Ice Cream Smores
Turn this classic treat on its head by using chocolate ice cream and homemade marshmallow fluff instead!
Here's what you need:
- Graham Crackers
- Scoops of our Chocolate Orange Cranberry vegan ice cream
- 1/3 cup of water
- 3/4 cup of cane sugar
- 3 egg whites
- 3/4 cup of honey
- 1/2 tsp of cream of tartar
- 1 tsp vanilla extract
What to do:
- Make your marshmallow fluff:
- Add egg whites and cream of tartar in a stand-mixer bowl
- Put the water, sugar, and honey in a medium saucepan and place over low heat to combine and dissolve the sugar (don't let simmer until the sugar has completely dissolved)
- Use a candy thermometer to simmer the mix until it reaches 120 degrees Celcius, then remove from heat once it has reached temperature
- Turn the stand-mixer on to medium speed to whip the egg whites to soft peaks (for approx. 3-4 minutes)
- Lower the mixer speed and slowly, carefully pour the sugar syrup into the egg whites in a thin steady stream
- Once the syrup is completely added, turn the mixer to high and continue whipping until the whites thicken and fluff up
- Continue to whip for 6-8 minutes or until the mixture is thick and glossy
- Add the vanilla and whip until the fluff is cooled
- Assemble your smores by added the small scoop of ice cream first to your graham cracker then top with marshmallow fluff
- Assemble your smores with graham crackers and the ice cream!
