Shamrock Fluff Leprechaun Hats

The perfect treat to celebrate St. Patrick’s Day (or anytime you're craving something indulgent). Start with a rich, chocolatey cookie base, topped with a creamy Shamrock Fluff ice cream and a layer of decadent chocolate. Finished with a touch of green icing and sprinkles, these cookies are as festive as they are delicious.
Ingredients:
- 2 cups chocolate chips
- Pint of Four All’s Shamrock Fluff flavour
- ½ cup butter
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup flour
- ⅔ cup cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 3 tablespoons milk
- Optional: green icing and green sprinkles
How to make:
- Melt 1 cup chocolate chips in the microwave in 30 second intervals until fully melted. Line a silicone cupcake tray with the chocolate and let it freeze for ten minutes.
- Once the chocolate is solid, add a scoop of Four All’s Shamrock Fluff flavour. Allow this to freeze for half an hour before adding the rest of the melted chocolate chips to the top of the ice cream and freezing again.
- Preheat the oven to 350°F. Mix together the butter, granulated sugar and brown sugar. Then add in the flour, cocoa powder, baking soda and salt. Add in the milk and mix until it becomes a thick cookie dough texture.
- Roll the cookie dough into balls and place on a lined cookie tray. Then using your hands or a glass, flatten out the cookie dough balls.
- Bake for 10 minutes, then allow the cookies to cool fully before adding the ice cream chocolates on top. Use green icing or sprinkles to decorate and serve immediately. Enjoy!
