Over the Rainbow Rice Krispie Squares
These Over the Rainbow Rice Krispie Squares are a vibrant and fun twist on the classic treat! Made with marshmallows, Lucky Charms, and topped with the sweet, creamy Over the Rainbow flavour ice cream, they’re bursting with colour and flavour. With just a few simple ingredients, you can create a whimsical dessert that’s as magical as it is delicious!
Ingredients:
- 3 cups marshmallows (try Dandie's brand for better-for-you marshmallows)
- 3 cups lucky charms
- ¼ cup butter (or vegan butter)
- Pint of Four All’s Over the Rainbow flavour
How to Make:

Melt the butter on medium heat in a large pot on the stove.

Add in the marshmallows and stir until they are smooth and melted. Then add in the lucky charms and stir again until fully incorporated.

Pour mixture into a lined casserole dish and allow it to cool.

When set, cut the rice krispie squares and scoop Four All’s Over the Rainbow flavour on top. Serve immediately, and enjoy!
