Try This At Home: Ultimate Ice Cream Sammie

Creamy ice cream, loads of chocolate chips, and 2 massive chewy chocolate chip cookies! 


What you need:

  • ⅔ vegan butter
  • ¾ cup coconut palm sugar or brown sugar
  • 1 ½ tbsp maple syrup
  • ¼ cup applesauce
  • 1 ½ tsp vanilla extract
  • 1 tsp cinnamon
  • 2 ⅛ cup all-purpose flour
  • ¾ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup chocolate chips 
  • 2L tub of Four All’s Chocolate Chip ice cream 


To make this recipe vegan, use our Chocolate Brownie Chunk ice cream. To make it gluten-free, use gluten-free flour instead of all-purpose. 


What to do:

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper. 

  2. Cream the butter and sugar together in a stand-mixer. Add the applesauce, vanilla and maple syrup. 

  3. Mix in the flour, baking soda, baking powder, cinnamon and salt. 

  4. Using a spatula, fold in the chocolate chips. 

  5. Take the lid off of the ice cream tub and flip it over so that the label is on the bottom of the counter. Take half of the cookie dough and fill the lid with the dough until it is evenly spread across it. Then, flip the lid over onto the baking sheet and continuing to use the spatula, spread the dough onto the baking sheet trying hard to keep the circular cookie shape. 

  6. Repeat this again for the second cookie, and place onto a different baking sheet. Place both of the baking sheets in the oven to cook for 25 minutes, alternating the rack that they are baking on half way through. 

  7. Once the cookies are finished baking, allow to cool for 20 minutes, then place in the freezer for a few hours. 

  8. Once the cookies are finished freezing, run a spatula around the inside of the 2L tub of ice cream and take the entire chunk of ice cream out of the tub, keeping the shape of it. Moving quickly, turn the roll of ice cream onto its side and grab a hot knife. Cut through the ice cream at about an inch width, this is going to be used as the center of the ice cream sandwich. 

  9. Place one cookie on it’s back so that the flat side is facing towards you, then place the circle of ice cream on top. Put the second cookie, flat side facing towards the ice cream on top of the ice cream and gently press down. Place back into the freezer to freeze for a few hours. 

  10. Use a hot knife to slice the giant cookie ice cream sandwich like a cake and serve to friends or family, enjoy!
