Try This At Home: Gluten-Free Matcha Olive Oil Cake

St. Patrick’s Day is coming up fast and we’ve just uncovered a pan of gold! This tray is too good to put down.

 

 

What you need:

  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 cup Eby Manor Whole Milk
  • 2 large eggs
  • 1-1/2 tsp vanilla extract
  • 1-1/4 cup almond flour
  • 1/2 cup gluten-free all purpose flour
  • 3/4 cup white sugar
  • 1-12 tbsp matcha
  • 1/2 tsp baking powder
  • 1 jar of our Chocolate Milk Ice Cream

 

What to do:

  1. Preheat the oven to 320F and line a square brownie tray (8x8) with parchment paper. 
  2. In a glass, whisk olive oil and milk
  3. Then, whisk in eggs and vanilla
  4. In a separate bowl, mix together the remaining ingredients
  5. Combine the liquid and dry ingredients
  6. Pour batter into a pan and bake for 45 minutes.
  7. Serve with a scoop of our Chocolate Milk Ice Cream!
