Tropical Vegan Chia Pudding Parfait

This tropical chia pudding parfait is a vibrant and refreshing treat, featuring layers of creamy coconut milk chia pudding, fresh tropical fruits, and a scoop of our cran-strawberry smoothie bowl sorbet for a tart and sweet contrast.

Ingredients:

For the Chia Pudding:

  • 1/2 cup chia seeds
  • 1 cup canned coconut milk (or any plant-based milk of your choice)
  • 1 tbsp maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • Pinch of sea salt

For the Tropical Fruit Layer:

  • 1/2 cup fresh pineapple chunks
  • 1/2 cup mango chunks (fresh or frozen)
  • 1/2 ripe banana, sliced
  • 1/4 cup shredded coconut (optional, for extra texture)
  • 1 scoop of cran-strawberry smoothie bowl sorbet (store-bought or homemade, see notes below)

For Garnish:

  • Fresh mint leaves (optional)
  • Additional shredded coconut or granola for crunch (optional)

Instructions:

  • Prepare the Chia Pudding:
    • In a medium bowl, whisk together the coconut milk, maple syrup, vanilla extract, and a pinch of sea salt.
    • add in the chia seeds and stir to combine. Let the mixture sit for about 5 minutes, then give it another stir to make sure the seeds aren’t clumping together.
    • Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken into a creamy pudding consistency.
  • Prepare the tropical Fruit Layer:
    • While the chia pudding is setting, prepare the tropical fruits. Peel and chop the pineapple, mango, and banana into small bite-sized pieces. Set aside.
  • Assemble the Parfait:
    • Once the chia pudding has thickened, start layering your parfaits. In serving glasses or bowls, add a few spoonfuls of chia pudding as the first layer.
    • Add a layer of tropical fruit on top of the chia pudding.
    • Add another layer of chia pudding, followed by more tropical fruit, and repeat until you’ve filled the glass or bowl.
  • Add the Cran-Strawberry Smoothie Sorbet:
    • Scoop a generous amount of cran-strawberry smoothie bowl sorbet and place it on top of the parfait for a refreshing, tart contrast. Serve immediately or refrigerate for up to 2 hours for an extra cool treat.
