STUFFED "Dubai Chocolate Inspired" Chocolate Ice Cream Bars
Inspired by Dubai Chocolate bars, we've created an allergen friendly Stuffed Chocolate Ice Cream Bar using brilliantly green Nuts To You Pumpkin Seed butter (You won't believe how much this looks like pistachios, and the rich nutty taste is on point) and our plant-based top-seller Chocolate Brownie Chunk Pints. This recipe has 2 components that need to be made in advance, but we promise they're super simple.

Component 1: Pumpkin Seed Butter Magic Shell

What you Need:
2 T Sugar
1 T Water
5 T Coconut Oil
1 Cup Nuts to You Pumpkin Seed Butter (or Nut/Seed Butter of choice - yep this works with any flavour)
3/2 Cup Gluten-Free Corn Flakes
What to Do:
  1. Combine Sugar and Water in small pot.  Heat on medium heat until sugar is dissolved.  (Stay close by, this doesn't take long)
  2. Add Coconut Oil stir until melted
  3. Add Nut/Seed Butter, whisk until fully combined.  Don't worry, we promise it'll come together.
  4. Pour into a tall container, (with ~ 3 inches of space - you'll see why when it comes to dipping) and allow to cool to room temperature.
  5. Set Aside until it's time to dip
  6. Add Gluten-free corn flakes and stir in before dipping 
Component 2: Chocolate Magic Shell

What you Need:
1 Cup Chocolate Chips
3 T Coconut Oil
What to Do:
  1. Combine coconut oil and chocolate chips and melt over double boiler or microwave (in 30 second intervals, stirring in between)
  2. Once fully melted, stir until completely smooth.
  3. Pour into a tall container, (with ~ 3 inches of space - you'll see why when it comes to dipping) and allow to cool to room temperature.
  4. Set Aside until it's time to Dip.
The Main Thing: STUFFED "Dubai Chocolate Inspired" Chocolate Ice Cream Bars

  1. Grab a pint of your fave Four All flavour.  We used our vegan Chocolate Brownie Chunk ice cream. 
  2. Quarter your pint. Slice right through that thing!
  3. Insert popsicle sticks into each end and set in your freezer to harden.
  4. Once hardened, dip your naked ice cream bar into the Nuts to You coating. We made ours with Pumpkin Seed butter because we're inspired by the pistachios in dubai chocolate and that rich green colour is everything! This is where it's very important that your container is tall enough with 3 inches of space, otherwise you'll overflow (ask us how we know).
  5. Let that coating fully set in your freezer.
  6. Dip again, but this time into the chocolate shell coating. 
  7. Garnish with pumpkin seeds, and allow to harden in your freezer.
