Lemon Gingerbread Donuts
Bewitch your taste buds with this quick dessert inspired by our Lemon Gingerbread Witch Ice Cream
Time: 1 hr (including 15 minutes bake time)
Makes: 6 donuts
*Gluten-Free Version: Use your favourite all-purpose gluten-free flour blend. Add 1/4 tsp xantham gum if not included in blend.
What you need:
- 1 x 500 ml jar of our Gingerbread Witch Ice Cream
Gingerbread Donuts:
- 90 g unsalted butter, softened
- 100 g light brown sugar
- 2 large eggs
- 100 g all purpose flour (can substitute with fave GF blend)
- 1 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp cloves
- Juice from 1 lemon
- 175 grams of icing sugar
Decorations:
- Sprinkles
- Mini M&Ms

What to do:
- Preheat the oven to 350F and grease a 6-cavity donut pan with butter or cooking spray.
- Combine wet ingredients: butter, brown sugar, eggs, into a large bowl
- Sift in dry ingredients: flour, baking powder, & ground spices
- Spoon into prepared donut pan. Can also use muffin pan if donut pan not available.
- Bake for 12 - 15 minutes or until inserted toothpick comes out clean.
- While donuts bake, prepare glaze.
- Stir together lemon juice and icing sugar until smooth.
- Dip baked, cooled donuts into glaze
- Sprinkle with decorations before glaze sets
- Enjoy with a scoop of ice cream, right in the donut hole!
