Lemon Gingerbread Donuts

Lemon Gingerbread Donuts
Bewitch your taste buds with this quick dessert inspired by our Lemon Gingerbread Witch Ice Cream
Time: 1 hr (including 15 minutes bake time)
Makes: 6 donuts
*Gluten-Free Version: Use your favourite all-purpose gluten-free flour blend.  Add 1/4 tsp xantham gum if not included in blend.
What you need:

Gingerbread Donuts:

  • 90 g unsalted butter, softened
  • 100 g light brown sugar
  • 2 large eggs
  • 100 g all purpose flour (can substitute with fave GF blend)
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp cloves
Lemon Glaze:
  • Juice from 1 lemon
  • 175 grams of icing sugar

Decorations:

  • Sprinkles
  • Mini M&Ms

 

What to do:

  1. Preheat the oven to 350F and grease a 6-cavity donut pan with butter or cooking spray.
  2. Combine wet ingredients: butter, brown sugar, eggs, into a large bowl
  3. Sift in dry ingredients: flour, baking powder, & ground spices
  4. Spoon into prepared donut pan.  Can also use muffin pan if donut pan not available.
  5. Bake for 12 - 15 minutes or until inserted toothpick comes out clean.
  6. While donuts bake, prepare glaze.
  7. Stir together lemon juice and icing sugar until smooth.
  8. Dip baked, cooled donuts into glaze
  9. Sprinkle with decorations before glaze sets
  10. Enjoy with a scoop of ice cream, right in the donut hole!
