Gluten-Free Cinnamon Sugar Waffles with Cereal Milk Ice Cream

Ingredients:

For the Waffles:

  • 1 1/2 cups gluten-free all-purpose flour (make sure it contains xanthan gum)
  • 2 tablespoons cornstarch
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder (make sure it’s gluten-free)
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 1 1/4 cups milk (use dairy or dairy-free, such as almond or oat milk)
  • 1/4 cup melted butter or coconut oil (for dairy-free)
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar:

  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Toppings:

  • 1 pint Four All’s Cereal Milk Ice Cream

Instructions:

1. Make the Waffles:

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • Mix the dry ingredients: In a large bowl, whisk together the gluten-free flour, cornstarch, sugar, baking powder, salt, and cinnamon.
  • Mix the wet ingredients: In a separate bowl, whisk the eggs, milk, melted butter (or coconut oil), and vanilla extract until fully combined.
  • Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable. If it’s too thick, add a little more milk.
  • Cook the waffles: Lightly grease the waffle iron with cooking spray or a little melted butter. Pour enough batter into the waffle iron to cover the surface (about 1/3 to 1/2 cup, depending on your waffle iron). Close the iron and cook according to your waffle maker’s instructions, usually 3-5 minutes, until golden and crisp.
  • Cinnamon sugar coating: While the waffles are still warm, mix together the cinnamon and sugar in a shallow bowl. Immediately dip each waffle in the cinnamon sugar mixture, making sure to coat both sides.

2. Assemble the Dish:

  • Place a hot, cinnamon-sugar-coated waffle on each plate.
