Fudgy Heart-Shaped Brownies

If your love language is chocolate and ice cream, we have you covered! Celebrate Valentine’s Day with these adorable gluten-free heart-shaped brownies topped with your favourite ice cream!

 

Heart-Shaped Brownies for Two

  

Time: 50 min

Serves: 4+

What You Need:

  • 240 g dark chocolate (70% cocoa)
  • 120 g butter, unsalted
  • 3 eggs, room temperature
  • 210 g yellow golden sugar (or light brown sugar)
  • 75 g gluten-free flour blend
  • 30 g cocoa, alkalized (Dutch Processed)
  • 1/2 teaspooon xanthan gum (omit if your flour blend includes xanthan gum)
  • 1/2 tsp salt 
  • Jar of your favourite Four All ice cream.

 

What To Do:

  1. Preheat the oven to 320F and line a square brownie pan (8x8) with parchment paper. 
  2. In a double boiler, melt butter and chocolate together, and set aside.
  3. Whisk eggs and sugar together on medium to high speed until pale yellow and triple in volume.  Will take up to 10 minutes, and sugar should be mostly dissolved.
  4. Mix in melted chocolate.
  5. Sift flour, cocoa powder, xanthan gum and salt over the chocolate mixture.
  6. Fold dry ingredients into the wet ingredients, taking care to avoid any dry patches.
  7. Pour batter into brownie pan, and smooth top.
  8. Bake for ~26 minutes or until inserted toothpick comes out with moist crumbs (fudgy texture).
  9. Cool completely and cut with 2 - 3 inch heart-shaped cookie cutter.  Should yield 4 perfect hearts.  Save the scraps for snacking!
  10. Place a scoop of ice cream on each heart-shaped brownie and serve. Enjoy your Valentine’s Day treats!
